Making Chestnut Baklava

Ingredients:
For the dough:
2 cups all-purpose flour
1 egg
1/2 cup water
Less than 1 teaspoon salt
To roll out the dough:
2 tablespoons of wheat starch
For the filling
500 grams of chestnut paste
For the topping
650 grams of clarified butter (ghee)
For the syrup
650 grams granulated sugar
1 1/2 cups of water
Chestnut Baklava Instructions:
– Start by preparing the dough. Mix the flour, eggs, water and salt together until a smooth dough forms. Divide the dough into small balls and roll out thinly with a rolling pin, occasionally sprinkling with wheat starch to prevent sticking. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
– After resting, place the rolled out doughs on top of each other and cut them into 7 cm squares. Place a portion of chestnut paste in the centre of each square, then fold the corners towards the centre to seal the filling.
– Arrange the stuffed dough on a baking tray and drizzle with melted clarified butter. Bake in a preheated oven at 170°C for 25 minutes or until golden brown.
– While the baklava is baking, prepare the syrup by boiling the granulated sugar and water until it reaches 106°C (223°F).
– Remove the baklava from the oven and immediately pour the hot syrup over it with a ladle. Allow the baklava to absorb the syrup before serving.
