The name Sütlü Nuriye Dessert, often celebrated for both its name and taste, can be considered as the earliest version of cold baklava. But where does the name Sütlü Nuriye come from? Here’s the story of Sütlü Nuriye:
Sütlü Nuriye resembles baklava in appearance, but instead of pistachios, it uses whole almonds. This dessert, soaked in syrup, is also moistened with milk. Unfortunately, the history of Sütlü Nuriye associated with the cuisines of Diyarbakır and Kocaeli remains unknown. However, there are some tales regarding its name and origin. Let’s explore these tales together.

2 cups coarsely ground hazelnuts
For brushing between layers:
Butter
For the syrup:
3 cups granulated sugar
1 cup water
3 cups milk
How to Make Sütlü Nuriye Dessert:
– First, let’s prepare the syrup for our dessert. In a suitable saucepan, boil water and sugar for about 5 minutes.
– Then add the milk, stir, and remove from heat.
– Grease the bottom of our baking dish with butter.
– Place one sheet of phyllo pastry in the dish and brush it with butter. Repeat this process, stacking approximately 22 sheets on top of each other, brushing each layer with butter.
– Sprinkle all the hazelnuts over the phyllo pastry, then stack the remaining phyllo sheets in the same manner, brushing each layer with butter.
– After placing all the phyllo sheets in the baking dish, drizzle the remaining butter over the dessert. Trim the excess phyllo pastry from the edges for a neater appearance.
– Slice the dessert into squares.
– Then bake the dessert in a preheated oven at 180°C (356°F) for about 30 minutes or until golden brown.
– Once removed from the oven and cooled slightly, pour the cooled syrup over the dessert.
– After the Sütlü Nuriye dessert has fully absorbed the syrup, garnish it as desired and it’s ready to serve.
Enjoy your meal.
