    HOW TO MAKE HELATIYE PUDDING?

    Helatiye Pudding Ingredients:

    For the pudding;

    1.5 cups of milk
    half glass of water
    2 tablespoons of granulated sugar
    3 tablespoons of starch
    2 pieces of mastic gum

    For the sherbet;

    4 glasses of water
    3.5 cups of granulated sugar
    Half a tea glass of rose water
    1 tea glass of pomegranate seeds
    1 tea glass of peeled almonds
    2/3 tea cup peeled pistachios
    1 tea glass of chopped dried apricots

    How to make Helatiye Pudding:

    1. For the syrup, put sugar, water and rose water in a pot and boil over medium heat. Let it cool.
    2. Put milk, sugar and mastic gum in a pot and let it boil. Mix starch and water well, add it thinly to the milk and cook to the consistency of pudding.
    3. Spread the mixture into a square bowl moistened with water. After keeping it in the refrigerator for 2 hours, cut it into cubes. Divide the syrup into serving containers.
    4. Add diced custard, apricots, pomegranates, almonds and pistachios, mix gently and serve. Optionally, serve after cooling in the refrigerator.
