    Katmer, one of Gaziantep’s famous desserts, is served with poppy seeds and tahini in the Aegean region. Consumed in Central Asian countries as well, this dessert is prepared by folding and baking the dough. It’s typically garnished with pistachios and hazelnuts and cooked on an iron griddle. Due to its richness, it’s recommended to consume it in moderation. Among regional delicacies, katmer also provides the energy needed by the body.     Ingredients for Katmer

    For the dough:

    100g butter
    200ml water
    2-3 cups of flour
    1 teaspoon salt

    For rolling out:

    Starch

    For the filling:

    250g clotted cream
    10 tablespoons powdered sugar
    10 tablespoons powdered pistachios

    For garnish:

    Powdered pistachios
    Clotted cream

    How to Make Katmer

    – In a large bowl, mix water and salt until the salt is completely dissolved.
    – Gradually add flour while kneading until you get a dough with a soft earlobe consistency.
    – Divide the dough into eight equal pieces, cover them with a damp cloth, and let them rest for a day. The next day, roll out the rested dough thinly, sprinkling starch on top.
    – Spread melted butter over each piece of dough. Place clotted cream pieces on top and sprinkle with a mixture of powdered sugar and pistachios from a bowl. Fold the dough into a square shape.
    – Heat a non-stick pan and fry both sides of the katmer until golden brown. For an elegant presentation, garnish with clotted cream and pistachios. Enjoy your meal in advance!
